Tuscan Eggs

I love easy weekends. Nothing like a late start, a little bit of cooking, a lot of eating and binge watching to set the tone. One weekend, i saw an episode of Jamie Oliver's cooking show (well part of it) and he was making an interesting breakfast dish that had tomatoes, bell peppers and loads of other stuff. It also had eggs in it. The eggs were like sunny side up but "stewed" in the tomato mixture. It looked so YUM. Since i only saw the part where he already put the eggs in, i couldn't make out what else were in the dish. So i looked it up on Pinterest and found Tuscan Baked Eggs with Tomatoes, Red Onion, Garlic, Parmesan, and Herbs from  www.kalynskitchen.com. Though her dish looked a bit different than the one i saw on the show, it was practically the same thing.

I immediately pinned it to my Kitchen Line Up board but those recipes tend to linger in there for months! And this was no different. And boy was it a mistake to let it just sit there! It was sooooo good. I made it after Christmas so there was leftover ham. That plus a good quality baguette from Erik Kayser equals perfection. I can't wait to make it again!

Here's what you'll need:

1 Tablespoon EVOO
1 Teaspoon dried basil (if fresh is available, better)
1 Teaspoon dried thyme (if fresh is available, better)
1 sliced  medium red bell pepper
1 chopped small red onion
1 70-gram pack of tomato paste
3 eggs
6 garlic cloves, minced
6 diced ripe local tomatoes
Salt & Pepper to taste
Pecorino cheese

Here's what you do:

Preheat oven to 250C.
Heat EVOO in a pan. Sautee onion and garlic until fragrant. Add the tomatoes, red bell pepper, tomato paste and herbs. Let it simmer or just until it slightly thickens with occasional stirring. Add two pinches of salt and pepper (adjust according to preference). Give it one last stir and then transfer to a baking dish. Make little wells to make space for the eggs. Carefully break eggs into individual wells. Sprinkle with grated Pecorino cheese (don't be stingy with this one).
Pop it in the oven for about 10 minutes.
Serve hot with a nice crusty bread.
