Tofu Nuggets

As I have mentioned in a previous post, I have began observing Friday as a meatless day. I started looking up pseudo vegetarian recipes and found quite a few on Pinterest. No surprise too that I went for tofu as I do love the stuff. If you have yet to discover this protein wonder, you are missing out.



If you have tried it, and could care less or worse, don't like it at all... I ask that you give it another chance. This dish might just redeem the tofu's cred in your book.



Here's what you'll need:

1 pack firm tofu (sliced into 16 cubes)
2 cups panko flakes or bred crumbs
1 medium egg
2 cups cornstarch 
Salt & pepper to taste
Cooking oil for frying

For the sauce:
3 cloves garlic (minced)
1 tablespoon sesame oil
1 tablespoon soy sauce 
1 teaspoon vinegar
1/2 teaspoon chili flakes
1 teaspoon sriracha sauce

Here's what you do:

Mix all the sauce ingredients in a bowl and set aside. In a pan, heat the cooking oil.While you let your oil heat up. Place the egg in a medium bowl and whisk. On a plate, pour in the cornstarch and season with salt & pepper. Mix until well blended. In another plate, place the panko flakes. Coat each cube with 1. the cornstarch 2. the egg then lastly, 3. the panko flakes. Once your oil is ready for frying, carefully place each cube in the pan. Cook until golden brown. Then drain the excess oil using a colander or some oil absorbent paper.
